Made with raw milk from sheep and produced in the defined geographical area of ​​Serra da Estrela, this Queijo Madre de agua is a soft buttery cured cheese, white or slightly yellow and uniform in color. It is a cured sheep cheese.

This Queijo Madre de agua presents a semi-hard to hard paste, which can be slightly brittle, unctuous, yielding to the pressure of the finger, with few or no holes, obtained by prolonged maturation. With a characteristic smell, the bouquet is delicate.

Minimum curing period of 90 days, from semi-hard to hard paste.

Its maturation period has specific rules and its duration is at least 45 days. It has an unmistakable aroma and taste, smooth and refined.

How it all began...
One day, an old shepherd knocked on Luís and Lurdes' door to offer them to buy his 60 sheep flock. They said yes and their cheese adventure started! They had no experience and no collaborator so they had to work twice as hard as any other sheperd. Eventually, hard work paid off and they bought more land, an ovil, a milking parlor and a cheese shop. Today, more than 450 sheep and 150 goats produce the best milk and cheese in the region. They now have a dedicated shepherds team who start their activities every day at dawn and finish after sunset.
