About Monte Da Vinha 100% sheep - Portuguese Cheese

Considered as the best cheese in the world by many, Monte da Vinha is produced by Joana, a former lawyer who left her job and started making cheese by hand.

This cheese is produced by hand, without additives, using raw sheep's milk, salt and thistle as ingredients. The thistle (Cynara cardunculus), is a natural coagulant agent of vegetable origin, which gives the cheese its original and unique flavor. The selection of the best raw milk and the manufacturing processes used are combined in order to obtain a pure cheese with an incredible texture and flavor.

Monte da Vinha cheese presents a yellowish white color. In terms of texture, this cheese has a Semi-soft, buttery paste.
